
RAINBOW TALLARINUS
Tallarinus are one of Sardinia's most typical dishes. Made only with wheat flour selected from Campidano, a large plain that covers almost half of the island, they are one of the purest expressions of local cuisine. The preparation of this simple but extraordinary dish is an ancient tradition of many Sardinian families. They are made by mixing flour with eggs and in this case adding a small amount of local saffron or chlorophyll to give them their special color and exquisite taste. Afterwards, they are left to rest and then cut into strips that will play the main role in the preparation of a delicious and traditional Sardinian meal.
