saffron culurgiones

INGREDIENTS
“Is Prendas” pasta with saffron (quantity indicated in the package)
150 g of freshly grated pecorino
1 clove of garlic finely chopped
400 g of peeled tomatoes
1 small onion finely chopped
2 tablespoons of olive oil
Salt and pepper to taste
PREPARATION
- Cook the “Is Prendas” pasta with saffron following the instructions on the package.
- Prepare the sauce: in a pan, heat the olive oil and add the chopped onion. Let it sweat slightly, then add the chopped peeled tomatoes, salt and pepper. Cook for about 15-20 minutes over medium-low heat.
- Cook the culurgiones in abundant salted water for 2-3 minutes or until they rise to the surface. Drain them and season them with the sauce and a drizzle of olive oil.
- Serve the saffron culurgiones with hot sauce and oil. You can garnish with a sprinkling of freshly grated pecorino.
